Wild-Caught Jumbo Golden Yellow Croaker

How to cook it

Steam it whole with plenty of ginger and scallion, then finish with hot oil and premium soy for the purest expression of its flavour. Sear it in thick segments until golden and crisp for a salt-and-pepper plate, or braise it with rice wine, soy and rock sugar until the sauce turns glossy and clings to the fish.

Storage

Keep frozen at -18°C or below for up to twelve months. Thaw slowly in the refrigerator for 8-12 hours, turning once, so the thick centre defrosts evenly.
