Cooking notes
Thaw slowly in the refrigerator. Steaming is the best way to highlight its natural sweetness; it also braises well in a rich sauce, pan-fries to a crisp edge, or simmers into a soothing seafood broth. Take care not to overcook, or the flesh will dry out.
Storage
Keep frozen at -18°C or below. Never refreeze after thawing, and cook thoroughly straight after defrosting.
